I have done lots of backpacking and canoe camping as well, and have owned and used many bags over the years. I have several North Face and Kelty bags, and even two evacuee bags from the Korean War, which have the coyote fur collars and lots of down. None can compare to my two Wiggys bags, however. Wiggys bags have a patented insulation that no one else has, and this amazing insulation not only keeps you warm, but lets all of your body moisture pass through the insulation and shell so that you do not get clammy and damp. I first heard about Wiggys from a friend who is a vet that goes to the Iditarod races. I now own a bunch of Wiggys gear, including insulated vests, sweaters, boots and mittens, and I can tell you that they work as claimed. Hands down the best insulating layer I have ever worn. He has a website if you want to check him out. Jerry the owner is a very opinionated guy, and his newsletters are quite entertaining. Be assured, however, that his products work as claimed, and whenever my family goes camping, there is always a fight over who gets the two Wiggys bags, and who gets the North Face and Kelty bags. They really are that good!
As for tents, I have an older Eureka dome tent that has served me very well. Check out the ADVRider forums for lots of advice on newer gear. Obviously, one important consideration is the length of the poles, as you don't want to be clipping any guardrails or traffic signs as you ride:)
